Quanita Rice's Banana Bread Recipe
I have made this recipe for 30 years and it has never failed me. It produces a moist, flavorful loaf of bread. You can add nuts, chocolate chips, or whatever you like. - Quanita
Ingredients:
- 2 softened sticks of unsalted butter
- 1 cup of sugar
- 3 large over ripe bananas (when the skin is black is best)
- 2 eggs
- 1 1/2 tbsp sour cream
- 1 tsp lemon juice
- 1 tsp salt
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 cups of flour
Instructions:
- Cream together butter and sugar, add the eggs, bananas, sour cream and lemon juice, beat until everything is incorporated.
- Add the salt, both baking powder and soda and flour, mix until everything is incorporated well. You can stir in nuts, chips, etc. at this time.
- Spray cooking spray into your pan(s).
- Preheat the oven to 350 and put on the center rack. Pour into 1 large loaf pan, bake for 1 hour or until a toothpick inserted comes out clean. You can also make 4 small loaf pans and bake for 30 minutes after 30 minutes check to see if done. Or up to 30 mini muffins.
