Quanita Rice's Banana Bread Recipe

I have made this recipe for 30 years and it has never failed me. It produces a moist, flavorful loaf of bread. You can add nuts, chocolate chips, or whatever you like. - Quanita

Ingredients:

  • 2 softened sticks of unsalted butter
  • 1 cup of sugar
  • 3 large over ripe bananas (when the skin is black is best)
  • 2 eggs
  • 1 1/2 tbsp sour cream
  •  1 tsp lemon juice
  • 1 tsp salt
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups of flour


Instructions:

  1. Cream together butter and sugar, add the eggs, bananas, sour cream and lemon juice, beat until everything is incorporated.
  2. Add the salt, both baking powder and soda and flour, mix until everything is incorporated well. You can stir in nuts, chips, etc. at this time.
  3. Spray cooking spray into your pan(s).
  4. Preheat the oven to 350 and put on the center rack. Pour into 1 large loaf pan, bake for 1 hour or until a toothpick inserted comes out clean. You can also make 4 small loaf pans and bake for 30 minutes after 30 minutes check to see if done. Or up to 30 mini muffins.
